Meet Hillary Vaillancourt:
Food Lawyer, Author, Food Allergy Patient
Diagnosed in 2013, Hillary understands the challenges you face after your diagnosis.
MY FOOD ALLERGIES CHANGED MY LIFE
I had big dreams of being a cake decorator, baking and selling cakes that would make everyone who saw them smile.
I was on my way to achieving my dream when I was diagnosed with my food allergies in 2013. My allergies include chocolate, coffee, beef, shrimp, pecans, and corn.
It's pretty hard to sell cakes when I can't make chocolate-flavored goods. But the hardest part of my diagnosis was that my allergist didn't know much about a corn allergy. There was no list of ingredients I should look out for. Nobody told me how to read labels. I avoided events at work where food was involved.
THERE WERE NO RESOURCES TO HELP ME
I had to figure everything out on my own. It was HARD.
That's why I'm here now, to help you navigate this new world of food allergies, but most importantly to give you the information you need about food labels and your rights to ensure that you can be your own best advocate.
